Rustic Garlic chutney


A  rustic garlic chutney from the land renowned for the spicy food  - Andhra Pradesh. Made with just four ingredients, including salt, this one was introduced to me by my maternal grand mother. She was from the area where the spiciest red chillies - Guntur chillies were grown. When there was no  coconut or peanut chutney to go with the soft idlies, she would rustle up this in few minutes. All it took was some garlic cloves, chilli powder, salt and oil. Few poundings with the pestle and oil mixed in, the whole kitchen smelled delicious. 

This is for lovers of garlic. The smell will envelope you for a long time. Ammama, this is for you.



Ingredients:


  1. 1/4 cup of garlic cloves, roughly peeled. No need to peel them entirely.
  2. 1/2 tea spoon of salt
  3. 1 table spoon of chilli powder
  4. 1 and half table spoon of vegetable oil.


Method:


  • Pound the garlic cloves until they become a coarse paste in a mixie or  using a mortar and pestle.
  • Add the salt and chilli powder, pulse or pound until they get mixed.
  • Add the oil and mix everything thing through.
  • Taste and add salt if required.
Tastes great with dosa, idli or even with hot rice and a few dollops of ghee to temper the heat. Attempt only if you love garlic. Spice from the chillies is essential to add the kick, otherwise garlic will overpower the chutney. This is one of those that cannot be made less spicy.


Simple and rustic chutney that always reminds me of our ammamma (mother's mother). I have used this chutney to make amazing garlic bread too.
